- Ensures full standards compliance through regular audits, spot checks, standards testing and implementation of corrective action plans.
- Monitors financial performance including revenue, profitability, cost control and productivity.
- Oversees administration of departmental records, payroll, rostering, leave planning and manpower planning.
- Ensures strict adherence to grooming, hygiene and code of conduct standards.
- Conducts regular leadership meetings with Outlet Managers; reviews minutes of departmental meetings.
- Provides structured and ongoing performance feedback to direct reports.
- Acts as a hands-on leader during peak periods and high-profile events.
- Ensures a safe, clean and well-maintained working environment across all outlets.
- Performs any other cognate duties as assigned by senior management.
- Oversees daily operations of multiple outlets, ensuring seamless service delivery and consistent quality standards.
- Maintains strong floor presence; engages actively in service during high-volume periods.
- Drives achievement of revenue and profit targets; develops and implements revenue enhancement and cost management strategies.
- Leads and contributes to the Food & Beverage marketing plan; evaluates menu engineering, pricing strategies and promotional activities.
- Reviews and analyses outlet performance reports, guest satisfaction scores and financial results; implements corrective measures where required.
- Champions up-selling initiatives and monitors effectiveness through sales analysis.
- Ensures guest history records are accurate and effectively utilized for personalized experiences.
- Takes ownership of service recovery at a senior level and ensures timely resolution of guest concerns.
- Oversees planning and execution of major events.
- Ensures beverage and wine lists are strategically managed and commercially optimized.
- Continuously develops culinary, beverage and wine knowledge; supports training sessions, tastings and knowledge-sharing initiatives.
- Conducts routine outlet inspections; ensures timely maintenance and rectification of physical defects.
- Reviews pre- and post-service checks across outlets to ensure consistency.
- Ensures full compliance with cashiering, internal control procedures and POS accuracy.
- Conducts regular competitive analysis and market benchmarking; keeps abreast of global F&B trends and innovations.
- Oversees menu and beverage costing; analyses gaps between actual and potential food & beverage costs and operating expenses.
- Identifies operational inefficiencies and implements structured improvement plans.
- Drives long-term outlet positioning and concept development.
- Identifies new revenue streams and innovative guest experiences.
- Leads change management initiatives within the department.
- Supports division head in strategic planning and decision-making.
- Acts as second-in-command for the division when required.
- College degree preferably specializing in hotel/restaurant management.
- 4 - 5 years of relevant experience in a 5 star hotel/resort (Multiple Outlets experience)
- Has a well-developed interest in food and wines; has undergone professional training in food and wine knowledge.
- Possesses management skills and upward mobility.
- Possesses business acumen, well developed guest PR skills and personal flair.
- Be computer literate and fully conversant with food & beverage computer systems.
- Requires reading, writing and oral proficiency in the English language.
